1. Watermelon Feta Mint Salad (Sweet + Salty Perfection)

This is the definition of refreshing. Cold, juicy, slightly salty, with a fresh herb finish.

Ingredients:

  • 3 cups watermelon (cubed)
  • ½ cup feta cheese (crumbled)
  • ¼ cup fresh mint (chopped)
  • 1 tbsp olive oil
  • Juice of ½ lime
  • Pinch of sea salt

Instructions:

  1. Add watermelon, feta, and mint to a large bowl
  2. Drizzle with olive oil and lime juice
  3. Lightly sprinkle salt (don’t overdo it, feta is already salty)
  4. Toss gently and serve chilled

Chef Tip:
Chill your watermelon beforehand. Temperature matters more than you think. Cold enhances sweetness and makes this insanely refreshing.

2. Grilled Chicken Peach Arugula Salad (Sweet + Smoky)

This one feels like something you’d order at a high-end café.

Ingredients:

  • 2 cups arugula
  • 1 grilled chicken breast (sliced)
  • 1 ripe peach (sliced)
  • ¼ red onion (thinly sliced)
  • ¼ cup goat cheese
  • 2 tbsp balsamic glaze

Instructions:

  1. Layer arugula as your base
  2. Add warm grilled chicken and fresh peach slices
  3. Top with red onion and goat cheese
  4. Drizzle with balsamic glaze

Chef Tip:
Grill the peach for 1–2 minutes if you want to level this up. It caramelizes the sugars and adds depth.

3. Mediterranean Chickpea Cucumber Salad (Protein-Packed & Crisp)

This is your go-to when you want something filling but still light. Also, for my girlies who don't eat meat.

Ingredients:

  • 1 can chickpeas (rinsed and drained)
  • 1 cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • ¼ red onion (diced)
  • ¼ cup feta cheese
  • 2 tbsp olive oil (the best olive oil dispensers)
  • 1 tbsp red wine vinegar
  • 1 tsp oregano
  • Salt + pepper

Instructions:

  1. Combine chickpeas, cucumber, tomatoes, and onion
  2. Add feta on top
  3. Whisk olive oil, vinegar, oregano, salt, and pepper
  4. Pour over salad and toss well

Chef Tip:
Let this sit for 15–20 minutes before eating. The flavors develop and it tastes twice as good.

4. Strawberry Spinach Salad with Honey Dijon Dressing

I love a great salad with in season strawberries! This summer salads recipes is sweet, tangy, and slightly creamy. This one converts people who “don’t like salads.”

Ingredients:

  • 2 cups spinach
  • 1 cup strawberries (sliced)
  • ¼ cup walnuts
  • ¼ red onion (thinly sliced)
  • ¼ cup feta

Dressing:

  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar

Instructions:

  1. Add spinach, strawberries, walnuts, onion, and feta to a bowl
  2. Whisk dressing ingredients until smooth
  3. Drizzle and toss right before serving

Chef Tip:
Toast the walnuts for 3–5 minutes. That one step changes everything.

Ingredients:

  • 1 avocado (diced)
  • 1 cup corn (grilled or fresh)
  • 1 cup cherry tomatoes (halved)
